When you freeze and thaw fruit, it turns to mush. If you froze/thawed your hand, it would turn black and die. But if you freeze/thaw steak and other things, they remain juicy and perfectly fine. Why do some things freeze "well" but not others?

We are told not to reuse the plastic bottles from bottled water because chemicals from the plastic will be leeched into the new water. What is different between the plastic/water from an unopened bottle and the plastic/water when the plastic bottle is refilled?

A doctor will clean an injection site before giving a shot - why doesn't a dentist need to do so before a numbing shot? Don't our mouths generally have more bacteria than our arm/leg skin?
